With rich flavors of
the earth and sea, Ischia unlike other island evolved from mountain
duelers to sea. Being slightly isolated Ischia has maintained its
rich traditional Italian cuisine. The island specialty Ischia rabbit
captured in pits in the wild, grilled in garlic, onion and cherry
tomatoes, makes for the finest feast. In the 20th century rabbits
were plentiful in the mountains and was the main supplement of the
peoples diet.

A stricked
tradition of the island handed down from the past is to waist
nothing. This gave rise to the one of the most popular dishes of
Ischia. "Caponata". Made with stale bread soaked in water and then
smothered in tomatoes, olive oil, garlic, oregano, and anchovies.
This delicious dish, you won't find on a tourist menu. Only a few
families of ischia still have the pleasure of this delicious
tradition. Don' t forget to try the handmade limoncello and
nocino.
